There are more than 500 varieties of olives in Spain, depending on their characteristics they are used for the production of oil or table olives.

Each variety of extra virgin olive oil has organoleptic characteristics specific to the olive variety it comes from

Based on the variety of olive, we can talk about:

  • Extra virgin olive oil single variety, This is extra virgin olive oil made from a single olive variety. In the case of single variety extra virgin olive oil, the organoleptic characteristics may vary from harvest to harvest, as climate is one of the factors that affect the organoleptic attributes.
  • Extra virgin olive oil coupage, made with olives of different varieties or of the same variety but from different geographical areas. The coupage is not a mixture of different qualities of olive oil, but a combination of extra virgin olive oils with different organoleptic characteristics, to create an extra virgin olive oil with its own organoleptic characteristics, which are maintained year after year.

The following varieties stand out:

Arroniz: It is the most typical olive variety in the provinces of Navarre, Alava and La Rioja. Arróniz is a variety of olive tree that is very resistant to cold and withstands drought conditions. Its olives have a high yield and are used for oil production in oil mills. Arróniz olive oil has good resistance to oxidation and is highly valued commercially.

Arbequina: It owes its name to the town of Arbeca, although it is also called white. It is the most common variety in the province of Lérida, especially in the region of Las Garrigues, and is also common in the province of Tarragona (Campo de Tarragona, Bajo Campo, and the regions of Ciurana de Tarragona and Riudecañas). This variety is used to produce oils with the Garrigues and Siurana designation of origin. It was planted by the troops of King James I on his return after the conquest of the Balearic Islands. Its cultivation has spread to Andalusian and Castilian-La Mancha provinces due to its early entry into production, high productivity, good fat yield and excellent quality, although its yield is low. This olive produces very aromatic oils, green in colour at the beginning of the harvest, almondy, neither bitter nor spicy with characteristic olfactory notes.

Empeltre: It is usually cultivated in the southern provinces of Navarre, Zaragoza, Teruel and the Balearic Islands. It is appreciated for its productivity. It produces yellow and sweet oils, with a characteristic aroma reminiscent of banana and apple.

Picual: Other names are marteño, lopereña and nevadiño. It is originally from Martos (Jaén). It is widely cultivated in the province of Jaén, although it is also common in the provinces of Córdoba and Granada. It is highly appreciated for its early entry into production, its high productivity, its high fat content, as well as its high stability index and oleic acid content. It gives an exceptional oil with green tones, with a predominance of slightly bitter and fruity flavours and is very resistant to frost. It is the least resistant variety, that is to say, the one that maintains a constant average production throughout its productive life.

Manzanilla Cacereña: Also known as cacereña, redondilla. Cultivated in the provinces of Cáceres, Badajoz, Salamanca, Ávila and Madrid. Variety for oil and one of the best varieties for the table in both green and black. Deep green oil, bitter, spicy and very fruity with aromas of apple, grass, ripe banana, etc. High oleic acid content.

Manzanilla Sevillana: It is one of the table olive varieties par excellence. The Manzanilla olive has reached a level of international diffusion, due to its good characteristics for dressing green olives. Although it is not its usual use, Manzanilla olive oil is appreciated for its flavour, aroma and resistance to oxidation.

Hojiblanca: Also called casta de Lucena and lucentino. Mainly cultivated in the provinces of Seville, Cordoba and Malaga. A high quality oil is extracted from it, although the yield of its fruits is low. Generally it gives oils with golden tones and a mild flavour.

Lechín de Sevilla: Other names are ecijano and zorzaleño. It is found in the provinces of Seville, Badajoz, Cadiz, Huelva and Malaga. Its oil content is medium, but of high quality.

Lechín de Granada: It is a variety of olive tree mainly cultivated in Granada. Among the existing olive varieties, it stands out for its excellent keeping qualities. For this reason, it is highly appreciated as a black olive for table use. It can be used both for table olives and for the production of olive oil. Moreover, the Lechín olive variety is rustic, adapts well to limestone soils and withstands drought better than other varieties.

Morisca: Also called basta, macho and verdial. It is a very old variety (dating back to the 11th century). In Spain it is mainly found in the province of Badajoz. The Morisca variety is well adapted to drought and poor soils. The olives of this variety are of very large size, being appreciated for green dressing. They have a high fat yield and produce a highly valued oil with a high linoleic content. Morisca is very sensitive to several of the most important diseases of the olive tree

Cornicabra: Other names are cornacha, cornizuelo, corniche and ornal. Typical of the areas of Ciudad Real and Toledo, it is a common variety throughout the west of Castilla-La Mancha and its bordering areas with Extremadura. It can also be found in Madrid. It gives strong flavoured and very aromatic oils. It is appreciated for its high fat yield, the quality of its oil and its great stability.

Royal: From the region of Cazorla (Jaén). Red in colour, its main organoleptic characteristic is that the oil it offers is freshly fruity and has a sweet aroma. Its flavour is smooth and not at all aggressive on the palate. On the nose it has an intense ripe fruitiness with hints of ripe figs. It is an oil of the highest quality.

Serrana: It is a variety from the Alto Palancia, in the foothills of the Sierra de Espadán, in the interior of the province of Castellón. It is greenish-gold in colour, with a full body and a very fruity flavour.

Weevil: It originates from the province of Cordoba. It is a rustic variety of olive tree of high production, high fat yield of olives. Although it has traditionally been used in the producing areas as a table olive with good characteristics, its main destination is the oil mill, where it produces an extra virgin oil with a highly appreciated flavour. The Picudo olive is very sensitive to olive leprosy, a negative aspect for its use as a table olive.

Blanquette: Typical of the provinces of Valencia and Alicante. The tree is not very vigorous and very productive, interesting qualities in hedgerow olive groves. The olives have a very high yield and are used for the production of olive oil. It produces an olive oil appreciated for its fruity and sweet taste, however, it has a low oxidative stability.

Sevillian Gordal olives: Due to its large olives, it is one of the most appreciated table olive varieties. The largest producing province is Seville. This type of olive stands out for its large size and is harvested green for the table. It is hardly used in olive oil production, has a low yield and low stability against oxidation. Its olives are prone to wiring, which is why, in order to obtain quality olives, the cooking phase (removing bitterness with caustic soda) must be carried out precisely and meticulously. Gordal olives are seasoned in various ways and are used in the production of Kimbos (olives + gherkins).

Aviary: It is so called because its olives are very appetizing for the Thrush. Its main growing area is located in the province of Cordoba. The tree takes a long time to come into production, but finally it is regular and productive. Its olives are very large and high yielding. In the oil mill, it allows us to obtain extra virgin olive oils of excellent quality.

Ocal: It is a versatile olive variety, suitable for table olives and olive oil production. It is mainly found in the province of Cordoba. It produces an olive oil that is highly valued for its fruity aroma. The Ocal olive tree has good productive characteristics, being interesting its plantation to differentiate it from other more abundant olive oils such as Picual and Hojiblanca.

Castilian: Known as Verdeja, it is a variety originating from Castilla la Mancha, mainly located in Cuenca and Guadalajara. Castellana olive oil is protected by the P.D.O. Aceite de la Alcarria. The Castellana olive tree is a variety of olive tree sensitive to Tuberculosis.

Verdial de Badajoz: Mainly located in Extremadura. The tree stands out for its productivity, regularity and resistance to drought. It is large in size and has a high olive oil content. It is excellent for producing green table olives and olive oil of high stability and organoleptic quality. It is drought resistant, productive, not very neighbourly, suitable for dressing and oil production. It is quite sensitive to Soapy Olive or Anthracnose.

Ergot: Produce un aceite reconocido y apreciado por su buena calidad (DOP Aceite de Monterrubio). Su cultivo se localiza principalmente en Badajoz. Las aceitunas son de alto rendimiento, tamaño grande y tienen una elevada resistencia al desprendimiento

Pico Limón: La variedad de aceituna Pico Limón se encuentra en expansión por sus buenas características. Su zona tradicional de cultivo es la campiña sur de Badajoz. Pico Limón destaca por su productividad alta y buena calidad tanto para aceituna de mesa como para producir aceites de oliva de máxima calidad

Villalonga: Es principal de la Comunidad Valenciana (Valencia, Alicante y Castellón). Es una variedad de aceituna precoz, productiva. Las aceitunas destacan tienen un alto rendimiento, siendo su uso principal la producción de aceite de oliva. Destaca por ser uno de los olivos más resistentes a la humedad o asfixia radicular

Farga: Su provincia principal de cultivo es Castellón. La mayor parte de los olivares son centenarios, existiendo ejemplares milenarios de esta variedad. Las aceitunas de la variedad Farga tienen alto rendimiento y son destinadas a almazara para producir aceite de oliva

Alfafara: Es muy antigua, se cree que fue introducida por los Fenicios en la península. Su cultivo se ubica principalmente en Alicante y Valencia. Destaca por su buen comportamiento frente a las enfermedades. Produce aceites de oliva apreciados por su sabor equilibrado y buena resistencia a la oxidación

Changlot Real: Localizadas principalmente en la provincia de Alicante. El árbol tiene buena capacidad de adaptación al terreno y resiste bien las enfermedades. Sus aceitunas tienen alto rendimiento y se destinan a la almazara

Negral: Es una variedad con origen Sabiñán (Zaragoza). Como aceituna de mesa, es apreciada por su dulzor. Siendo habitual encontrar las aceitunas en forma de aceituna negra deshidratada. El olivo se adapta bien a terrenos secos y calizos. Además, es tolerante a varias enfermedades

Arbosana: Está en expansión gracias a su buena adaptación al olivar superintensivo en seto. De entrada, en producción muy precoz, permite lograr producciones de aceite elevadas. Su cosecha es más lenta comparada con Arbequina, aceite de buenas características y mayor resistencia a la oxidación que la arbequina

Sikitita: Es una variedad de olivo seleccionada específicamente para las condiciones del cultivo superintensivo. La obtención es fruto de los trabajos de investigación realizados por la OCU y el IFAPA
